Chorizo and Sweet Pepper Rice

Chorizo and Sweet Pepper Rice

Instructions

Heat the oil in a wok or frying pan. Stir-fry the red pepper and leek for 2-3 minutes. Add the mushroom, sugar snaps and cashew nuts to the wok and stir-fry for another 2 minutes. Meanwhile, microwave the rice according to instructions. Season with a splash of soy sauce (optional).

Ingredients

  • 1 250g pack Uncle Ben’s® Mexican Rice
  • ½ tbsp olive oil
  • ½ red chilli, sliced
  • 1 red onion, peeled and sliced
  • 1 red pepper, deseeded and sliced
  • 1 yellow pepper, deseeded and sliced
  • 50g (1¾ oz) chorizo
  • 1 tsp freshly chopped parsley

Serves 2.
Prep/cooking time:
15 minutes.

Chicken Biryani

Instructions

Heat the oil in pan and fry the chicken until golden and cooked through – remove with a slotted spoon and keep warm. Add the onion to the same pan and cook over a medium heat for 8-10 minutes, until soft and lightly brown. Add the spices and cook for another 2-3 minutes before adding the peas. Stir well then keep warm with the chicken. Bring 30ml (2 tbsp) water to boil in the same pan then add the rice, cover and simmer for 2 minutes. After this time take off the lid and spoon the onion and chicken mixture on top then re-cover and leave to sit for 2 minutes. Mix well to serve, fluffing the rice with a fork to separate the grains.

  • 1 x 250g pack Uncle Ben’s® Express Vegetable Pilau Rice
  • 2 tbsp olive oil
  • 200g (7 oz) of boneless chicken breast, cut into strips
  • 1 large onion, peeled and sliced
  • 3 cloves
  • 2 cm piece cinnamon stick
  • 3 cardamom pods, lightly crushed
  • pinch cumin seeds
  • 50g (1¾ oz) frozen peas

Serves 2.

20 minutes.
